Eat Local!

A recent development in science that we have all experienced the societal reaction is the realization on how the way we import food has impacted our environment. Recently there has been a big push to eat local, and help support local farms instead of buying products that may be cheaper and available more often, from foreign sources. The science behind this is that there is more of an environmental toll created by food that has to be flown over seas, or shipped by truck to get to its consumers.
Society has reacted to this information about our food system in multiple ways. Many people now grow a small amount of food on their own, such as seasonal vegetables and herbs. Also, there has been a deliberate shift to purchase foods grown locally, versus the cheaper but more polluting foreign counterparts. For example, here in Burlington the Bluebird tavern just opened; a restaurant where the food is made completely from locally grown vegetables and locally raised meat. Hellman’s, the major mayonnaise company, has produced this commercial about how imported food is ruining the Canadian food market, and the same is true about the American system. Farm to Table cooking has become much more popular and sought after in recent years than before the connection was made about increased pollution and food “travel time.” The science that unearthed the destruction of the environment in relation to unnecessary foreign imports is the reason behind all of the actions people have taken to make a shift in the American, and Canadian, food system.
